The leaves have been changing color and the weather is getting cooler. Time to break out the comfort food and get cozy with this month’s round-up of soups and stews for the cool fall nights.

Let’s start it off with a vegetable soup. When “Fruits & Veggies More Matters” came out with 10 reasons you should eat soup, this recipe by Cookie + Kate was one of our first picks. It's incredibly filling, hearty and packed with our favorites, tomatoes and bell peppers. Add quinoa, kale and any other veggies you like. This recipe has really won us over with this dish.   

Keeping with the soup theme, one of Red Sun Farms’ tried and true favorites is our delicious stuffed pepper soup. It's the best of both worlds, stuffed peppers, and soup but half the work. Or if you share our love for peppers, how about a roasted red pepper tomato soup? It can be served with anything from meatballs, to pasta, smoked cheese or hot pepper flakes. Sub out canned tomatoes for our homemade canned Roma’s This soup from Ciao Florintina is sure to give you all the warm feels.  

Staying in Tuscany, stews are also a popular comfort food. They are usually one-pot wonders, in that, all the necessary ingredients go into one pot to cook at the same time, creating a mouthwatering dinner that’s great for the busy family. This Tuscan Vegetable Chicken Stew from The Recipe Critic is a taste of Italy that won't disappoint.

Just because it’s fall doesn’t mean you can’t have spring vegetable minestrone soup. Packed with everything from carrots, to celery, diced tomatoes, spiralized zucchini and roasted bell peppers. This soup reminds us of those late fall days, sitting at grandma's table playing old maid and checkers. It includes all your favorite flavors and is sure to make you feel warm and cozy.

What is it about a hamburger or macaroni soup that makes us feel like we’re being wrapped in a fuzzy blanket? Maybe it’s the memories of childhood favorites or grandmas winter break lunches; either way, these are some of our favorite ground beef soups. Some other great soups and stews that remind us of our childhood are Hungarian Pepper and Tomato Stew, grandpa used to serve it over sausages; Cabbage Roll Soup, and finally Italian Chicken Stew just like Nonna used to make.
