We’ve all been there: get finished with a long day at work, pick up the kids from practice, get home, feed the dog, make dinner and homework. It can be exhausting, but it doesn’t have to be! With these seven easy dinners, you can spend less time in the kitchen cooking or washing dishes.  

These  Bell Pepper Pizzas  definitely fit the bill - a healthy alternative to regular pizza crust, totally easy and ready in about 20 minutes. Or this  Chicken Lo Mein  — it doesn’t get much simpler than throwing everything into one pot. A great reason to skip the take-out, even on the busiest of nights!  

Is there anything more refreshing when the weather’s hot than a cool, cucumber salad? Serve this Cucumber Salad with Lime Vinaigrette alongside whole grain bread, add canned tuna or salmon for a heartier meal. Seven-Ingredient Avocado Tomato Salad is another refreshing option for those hot summer nights that can be served over quinoa or alongside grilled tofu or chicken.
